Priscilla's Shepherd's Pie
This was an awesome dish I made for St Patrick's Day this year. Everyone in my family loved it and we all can't wait until I make it again.

Calories: ~477 per serving
Ingredients:
1 lb beef stew meat
3 tbsp olive oil
1/4 cup finely diced onion
1/2 cup finely chopped carrots
1 cup peas, canned and drained
1/2 tsp ground thyme
1/2 tsp ground oregano
1 tsp garlic powder
1 tbsp tomato paste
1 tbsp worcestershire sauce
3 tbsp all purpose flour (wheat flour works too)
3/4 cup Guinness Draught Beer
1 cup beef broth unsalted
24 oz Bob Evans mashed potatoes, cooked
1/2 cup shredded mild cheddar cheese
salt & pepper, to taste
Instructions:
1. Preheat oven to 400 degrees Fahrenheit. Prepare a 9x13 casserole dish.
2. In a large skillet, heat olive oil over medium heat. Add onions and carrots and cook until until are translucent. Add the beef stew meat and cook until completely browned.
3. Add the peas, spices, tomato paste, and worcestershire sauce and mix until well combined. Pour the Guinness in and cook for about 3 minutes or until beer has reduced.
4. Sprinkle with flour and add the beef broth. Simmer for 4 minutes or until sauce has thickened. Remove from heat.
5. While the food is simmering, cook the bob evans mashed potatoes.
6. Transfer the beef mixture into the casserole dish and spread out evenly. Top with the mashed potatoes. Sprinkle the cheddar cheese evenly over the dish.
7. Bake for 15-20 minutes. Serve hot!
