Priscilla's Chili Tilapia
If you like a little spice on your fish, this is a must try!
Yield: 4
Cook time: 10 minutes
Ingredients:
4 tilapia filets, approx. 4 oz each
2 tbsp coconut oil, melted
3 tsp minced garlic
1/2 tsp paprika
2 tsp chili powder
1/4 tsp cumin
1/2 ancho chile pepper powder
1/4 tsp ground black pepper
pinch of kosher salt, to taste
Instructions:
1. Preheat oven to 400 degrees F. Prepare a foil lined cookie sheet. Pat dry the tilapia with paper towel. Next, arrange the filets on the pan and lightly season each filet with the salt and pepper.
2. Melt the coconut oil in a small saucepan over medium low heat. Mix the paprika, chili powder, ancho chile pepper, cumin, and garlic in the oil. Mix well. Remove from heat.
3. Spoon the sauce over each filet until gone. Bake the fish at 400 degrees F for about 8-10 minutes, until the fish flakes with a fork.
4. Serve immediately! I have served over couscous and it is a great healthy entree!
