Priscilla's Chicken Fajitas
A simple easy recipe for some great tasting fajitas!
Yield: 6
Ingredients:
Fajita seasoning:
1/2 tbsp chili powder
1/2 tbsp ground cumin
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp ground oregano
1/2 tsp salt
1/4 tsp ground black pepper
Chicken fajitas:
1 1/2 - 2 lb boneless skinless chicken breasts
1 onion
1 green bell pepper
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
2 tbsp extra virgin olive oil
2 tsp lime juice, or 1/2 a lime fresh squeezed
For serving:
tortillas
sour cream
pico de gallo
Instructions:
1. Trim and cut the chicken breasts into thin strips, lengthwise. Thinly slice the onion and all bell peppers.
2. Add all the fajita seasoning ingredients into a small mixing bowl and stir together.
3. Generously sprinkle the fajita seasoning mix on the chicken strips until covered. Use your fingers to rub and press the spices into the chicken.
4. Heat the oil in a large skillet over medium heat. Sear the chicken for about 7 minutes, or until fully cooked. Once the chicken is cooked through, place on a plate and set aside.
5. Add the bell peppers and onion to the same skillet and saute for about 5 - 6 minutes, stirring frequently. If you had a little of the fajita seasoning left, feel free to sprinkle it over the veggies as they cook.
6. Add the chicken back into the skillet and splash with the lime juice. Stir everything together. Serve immediately with warmed tortillas and extra toppings!
