Priscilla's Asian Salmon in Foil Packs
A delicious way to make a simple meal and have less mess!
Yield: 4
Cook time: 20 minutes
Ingredients:
4 salmon filets, without skin
2 cups broccoli florets
Sauce:
1/4 cup honey
2 tsp minced garlic
2 tbsp soy sauce, reduced sodium
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp minced ginger
Optional:
1 tsp Sriracha
ground black pepper to taste
green onion sliced, garnish
Instructions:
1. Preheat oven to 400 degrees Fahrenheit. In a small bowl, mix together all the sauce ingredients (Sriracha and pepper if desired) until mixed evenly. Set aside. Tear off 4 sheets of aluminum foil about 15 inches long.
2. Place a salmon filet in the middle of each piece of foil. Add broccoli around the salmon. Pour a quarter of the sauce over each foil pack.
3. Pull up two sides of each of the foil packs, while folding one over the other and tightly pinching and sealing the foil (you want to seal the foil and make a packet).
4. Place the packets on a baking sheet carefully. Bake in the oven for about 20 minutes or until the salmon is cooked through. Carefully open the foil packs; steam will escape.
5. Add green onion if desired before serving!
