Priscilla's Chicken HomeRun Chili
A healthier spin on the traditional chili I make. Contains about 335 calories per 1 cup serving!
Yield: 5 - 1 cup servings
Calories: 335
Ingredients:
1 tsp extra virgin olive oil
1/2 tbsp yellow onion, diced fine
2 tsp minced garlic
1 lb ground chicken
3/4 tsp Lawry's season salt
1/8 tsp ground black pepper
1/8 tsp ground white pepper
3/4 tsp paprika
1 1/2 tbsp chili powder
8 oz tomato sauce
1 can Bush mixed pinto & kidney bean in mild chili sauce (see note)
1 can Bush kidney beans in mild chili sauce
Instructions:
1. Add the olive oil in a saucepan on medium to medium high heat.
2. Add the onion and garlic. Sauté until tender. Add the ground chicken and cook until done. Drain the excess grease.
3. Add the salt, both peppers, paprika, and chili powder. Stir well. Add the beans and mix together well.
4. Add the tomato sauce. Stir. Let simmer, covered, for about 15-25 minutes. Stir occassionally.
5. Stir and add additional seasoning if needed.
6. Add any additional toppings desired such as chives, shredded cheese, or sour cream.
Note:
Feel free to use any types of chili beans in chili sauces. I use mild because I do not like my food too spicy.
