Priscilla's HomeRun Chili

I have always loved chili! I created this using my favorite spices and ingredients. It is a more mild spice chili than others seem to like, but heat for me has to be more mild. Feel free to add some jalapenos or some cayenne or red pepper flakes to add heat for your own dish. I have included stove top and slow cooker recipes!



Yield: 12 cups


Ingredients:

1/4 cup diced onion

3 tsp minced garlic

1 lb ground beef

1 lb ground chicken

1 1/2 tsp Lawry's season salt

1 1/2 tsp paprika

2 1/2 tbsp chili powder (dark chili pepper works also!)

1/4 tsp black pepper

1/4 tsp white pepper

2 Brooks mild chili beans, mild

2 Bush's mixed variety beans in chili sauce (or any type in chili sauce will suffice)

1 29 oz tomato sauce

1/2 tbsp extra virgin olive oil

*shredded cheddar cheese for topping in bowls (mexican blend is a great option too!)


Instructions:

Stove-top:

1.  Add 1/2 tbsp olive oil to large sauce pan and heat on medium-low.

2.  Add onion and garlic to sauté until tender. Be sure not to overcook garlic.

3.  Add the hamburger and chicken and brown until done. If little grease, spoon out the grease. Otherwise, drain the grease off and return the meat to the pan.

4.  Add the seasonings and stir. As that cooks, add the chili beans and stir while on medium heat.

5.  Next, add the tomato sauce (be sure not to let it splatter out). Stir. Let simmer, covered, for 15 minutes on low, stirring occassionally. 

6.  Taste and add any additional seasonings or spice it needs.  

7.  Serve hot! Top the bowls off with some shredded cheddar cheese or a mexican blend goes well too!


Crockpot:

1.  In a skillet on medium heat, add the olive oil. Add the onion and garlic. Saute until the onion is translucent and tender, about 3 to 5 minutes.

2.  Add the hamburger and chicken and brown until done. If little grease, spoon out the grease. Otherwise, drain the grease off.  Transfer meat into the slow cooker.

3.  Add all the seasonings and stir. Next, add all the beans and tomato sauce. Mix well!

4.  Cook on low for 2-3 hours. Stir occassionally. Taste and add any additional seasonings if desired.

5.  Serve hot! Top the bowls off with some shredded cheese. Enjoy!
