Priscilla's Breakfast Casserole with Sausage Gravy

I love breakfast food. Eggs, sausage, bacon, biscuits and gravy... they all rate high up on my favorite food list. So why not make something that has some of the best things all together!?

Ingredients:

Sausage gravy:

1 lb pork sausage

2 tbsp salted butter

1/3 cup all purpose flour

3 cups milk

1/2 tsp garlic powder

1 tsp ground black pepper, or more to taste

1/4 tsp salt


Casserole:

12 - 16 oz french bread loaf, cubed into less than 1"

1 lb pork sausage

1 cup shredded mild cheddar cheese

10 eggs

1 cup milk

1/2 tsp ground mustard

1/4 tsp ground black pepper

1/8 tsp salt, if desired


Instructions:

1.  First we need to make the homemade sausage gravy. In a large skillet over medium heat, cook the sausage until brown and fully done. Be sure to break up the sausage into smaller pieces while cooking.

2.  Place the butter in the skillet and stir until melted. In a small bowl, mix the flour, garlic, salt and pepper. Sprinkle the mixture on top of the sausage and slowly stir until well coated and the grease is absorbed fully. Continue to stir and let the mixture cook for another minute.

3.  Continue stirring while slowly adding the 3 cups of milk into the skillet. Continue to stir and simmer the gravy until it begins to thicken (3-5 minutes). If gravy is too thick, add another 1/4-1/2 cup milk. Cover and set aside.

4.  Prepare a 9x13 baking dish and preheat oven to 350 degrees Fahrenheit.

5.  Cook the sausage in a skillet for the casserole. Drain grease once the sausage is cooked thoroughly. Meanwhile, cut the French bread loaf into cubes less than 1" thick and line the bottom of the casserole dish. If it all won't fit, that is fine. I use anywhere from 10-16 oz depending on which baking dish I use. (Calories are based on 10 oz bread)

6.  Spread the sausage on top of the bread. Sprinkle the cheddar cheese evenly over the sausage.

7.  In a small bowl, combine the milk, eggs, ground mustard, salt, and pepper. Whisk well. Pour the egg mixture over the shredded cheese evenly.

8.  Pour or spoon sausage gravy mixture over the egg mixture, covering the entire top of the dish.

9.  Bake in the oven uncovered for 35-45 minutes, or until the eggs are cooked and the top is beginning to brown slightly.

10.  Remove the baking dish from the oven and serve hot! Enjoy!
