Priscilla's Air Fryer Asparagus & Peppers
A wonderful side dish that tastes great and has become one of the most favorite ways to cook and season asparagus for my family!
Yield: 4
Ingredients:
1 bundle fresh asparagus
1-2 bell peppers sliced (any color)
extra virgin olive oil (to spray on or drizzle)
1/2 tsp garlic salt
1/2 tsp white pepper
1 tbsp grated parmesan
1 tbsp lemon juice (to drizzle over)
*Optional: add a little shredded parm over the vegetables as soon as they come out of the air fryer
Instructions:
1. Rinse the asparagus and peppers. Pat dry with a paper towel after. Trim off the wooden ends of the asparagus. Remove the core and seeds of bell peppers, then slice thin.
2. Lay the asparagus in a single layer in the air fryer basket and spritz (or drizzle) with olive oil.
3. Sprinkle the garlic salt evenly over the asparagus. Repeat with the white pepper and grated parmesan. If you have a large enough air fryer, do this same process with the bell peppers. I did mine in batches with asparagus first since they take longer to cook, then the peppers last.
4. Air fry at 400 degrees F for 8 minutes for the asparagus and 5 minutes for the peppers. (see note)
5. Drizzle the lemon juice over all the vegetables and top with additional parmesan if desired. Serve immediately and enjoy!
Notes:
Not all air fryers cook the same, so be sure to check doneness, especially if you have preheated your air fryer or doing them in batches also since they will cook faster.
