Priscilla's Sausage & Veggies
An easy meal to throw together for dinner.
Yield: 4-6
Ingredients:
2 tbsp extra virgin olive oil
2 tsp Italian seasoning
1 tsp minced garlic
1 tsp kosher salt
1/2 tsp ground black pepper
28 oz smoked sausages, any variety (I use both skinless original and kielbasa)
1 - 1 1/2 lb yellow potatoes
1 - 1 1/2 lb broccoli florets
2 bell peppers, any color
Fresh parsley or basil for garnish
Grated or shredded parmesan for garnish
Instructions:
1. Preheat oven to 425 degrees Fahrenheit. Prepare a large rimmed baking sheet, or two medium size will suffice.
2. Wash potatoes and chop them into 1/2 - 3/4" pieces and place in a large bowl. Add 1 tbsp olive oil, 1/2 tsp garlic, 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp pepper. Toss to distribute the seasoning evenly.
3. Add to the baking sheet and bake for 10-15 minutes. Make sure the potatoes are spread apart to bake evenly.
4. Meanwhile, slice the sausages into 1/4 - 1/2" rounds. Chop the broccoli into small to medium florets. Cut the bell peppers, removing the stem and seeds, into thin strips. Add everything into the same large bowl from potatoes.
5. Add the remaining 1 tbsp olive oil, 1/2 tsp garlic, 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp pepper to the bowl. Toss to coat evenly.
6. Once the potatoes are done baking, remove from oven. Move the potatoes to the area on the outer edge of the tray. Add the sausages, broccoli, and peppers to the empty middle area. This will allow everything to cook evenly. Spread out as much as possible so the ingredients are not layered. (If you use two pans, feel free to just place the last ingredients on their own baking sheet.)
7. Bake for 15-20 minutes or until the veggies are tender. Remove from the oven. Add the parsley and some parmesan for garnish.
