Roasted Italian Garlic Potatoes

  Priscilla's Roasted Italian Garlic Diced Potatoes


Who doesn't love potatoes!?  I always loved making diced potatoes but I wanted to create something of my own that went well with many of my main dishes. 


Yield:  6-8 servings

Calories:  ~128 to 170 per serving


Ingredients: 

1 1/2 - 2 lb yellow or red potatoes, diced 

1 tbsp minced garlic 

1 1/2 tsp Italian seasoning

1 1/2 tbsp Worcestershire sauce

1 tbsp extra virgin olive oil

3/4 tsp Lawry's season salt

1/2 cup shredded parmesan cheese


Instructions:

1.  Preheat oven to 450 degrees Fahrenheit.

2.  Place diced potatoes in prepared glass 13x9 pan. Drizzle the olive oil over and mix to evenly coat.

3.  Drizzle the Worcestershire sauce over and mix.

4.  Add the garlic, Italian seasoning, and salt. Mix well to coat the diced potatoes evenly. Arrange into a layer so that they are not on top of each other.

5.  Bake for 15 minutes.  Take out of oven and stir the potatoes.  Spread 1/2 cup shredded parmesan over the potatoes and bake an additional 15 minutes or until tender.
