Priscilla's Slow Cooker Italian Chicken & Broccoli
Yield: 4 servings
Cook time: 2-3 hours
Ingredients:
2 lb boneless skinless chicken breasts, trimmed and cut in half into tenders
3 cups fresh broccoli florets
2 tsp Lawry's season salt
1/2 - 1 tsp ground black pepper
1-2 cups olive garden salad dressing
1/2 tbsp minced garlic
2 tbsp unsalted butter, sliced into thin slabs
fresh parsley chopped, for garnish, optional
Instructions:
1. Rinse and trim the chicken breasts and cut lengthwise into tenders size. Pat dry. Chop the broccoli into medium size florets. Sprinkle the salt and pepper all over the chicken and place into the slow cooker.
2. Spread the minced garlic on top of the chicken. Add the broccoli florets on top. Place the butter slabs on top spaced out. Pour the Italian dressing all over the chicken and broccoli.
3. Turn the slow cooker on high for 2 hours. Periodically stir the sauce, drizzling it over the chicken and broccoli. At 2 hours, check the doneness of the chicken with a meat thermometer. Chicken is cooked through at 165 degrees Fahrenheit. If not quite to temperature, turn the slow cooker to low for 20-30 minutes.
4. When the chicken is done, turn off the slow cooker. Serve the chicken and broccoli over rice, drizzling the Italian dressing mixture over the rice, chicken, and broccoli.
5. If desired, drizzle an additional 1/2-1 tbsp of the Olive Garden Italian dressing over the entrée for added flavor and zing. Sprinkle with fresh parsley. Serve hot and fresh!
