 Priscilla's Cube Steak with Gravy

I have never been a big fan of cube steak. I don't care for any type of dry meat and it always seemed tough. So I made this recipe keeping that in mind. And they turned out superb!

Ingredients:

6 cube steaks

8 tbsp unsalted butter

1/4 cup sliced onions

5 tbsp flour

1/8 tsp garlic powder

1 1/2 tsp paprika

1 tbsp kosher salt

3/4 tsp ground black pepper or white pepper

3 cups unsalted beef broth

1 1/2 tsp Worcestershire sauce


Instructions:

1.  Pound each of the cube steaks to tenderize the meat. Mix together the salt, pepper, garlic, and paprika. Season both sides of the meat with the mixture, reserving a pinch or two for the onions.

2.  On medium heat, add 2 tbsp of butter to a large skillet. Add the onions and the pinch of seasoning to the butter and cook until translucent. Remove the onions and set aside for later.

3.  Place the cube steaks in the skillet and cook on medium to medium high heat for about 4 minutes a side. Do not overcrowd the skillet. I cooked mine in 2 batches, placing the 3 cooked cube steaks on a plate. When done with all 6 steaks, leave them all on a plate and set aside.

4.  Add butter to the skillet and cook on medium high. Once melted, add the flour, whisking until smooth, about 1 minute. While whisking, add in the beef broth and worcestershire sauce. Whisk until smooth and creamy. Let this cook until boiling and thickened.

5.  Add the steaks back to the skillet. Coat them with the gravy. Serve, topping each with some extra gravy and onion. 

Great to serve with egg noodles or mashed potatoes!
