Cheesy Chicken, Broccoli, & Rice Casserole

 Priscilla's Cheesy Chicken, Broccoli, & Rice Casserole

An easy, yet delicious way to make a slow cooker casserole.


Yield: 6-8

Calories: 322 for 8, 430 for 6 /serving


Ingredients:

1 lb boneless skinless chicken breast, cut into 1/2-1 inch pieces

1 tsp minced garlic

1 tsp Lawry's season salt

1/2 tsp ground black pepper

1/2 tbsp finely diced onion

4 cups chicken broth unsalted

1 tsp better than bouillon chicken

1 can cream of chicken soup fat free

1 1/2 cups brown rice (uncooked)

2 cups shredded mild cheddar cheese (three state cheddar shredded is also great)

1 lb broccoli florets (cooked)


Instructions:

1.   Add the broth into a greased slow cooker. Whisk the bouillon into the broth until well mixed. Add the garlic, onion, salt, and pepper and mix well. Now add the cream of chicken soup. Mix. Stir in the rice and chicken. Cover.

2.  Turn the slow cooker on high for 3 1/2 hours.

3.  When the casserole is almost done, cook the broccoli florets. Stir in cheese after the 3 1/2 hrs. Add the broccoli and fold in. Serve hot!
