Baked Salmon Recipes for Healthier Meals

Priscilla's Baked Lemon Dijon Salmon

I have been trying to eat healthier meals and this is two that definitely rank up there! I made both these recipes at the same time and kept a few stored for lunches and dinner for the next few days. Meal prep can be a wonderful thing! Both of these recipes were quick, easy, and perfect for anyone short on time! To reheat, simply either place in a warm skillet or microwave with a wet paper towel draped over to keep moisture inside.


Yield: 2

Cook time: 10 minutes


Ingredients:

2 -6 oz Salmon filets, without skin

1 tsp extra virgin olive oil

1 1/2 tsp dijon mustard

1/2 tsp minced garlic

1 1/2 tsp lemon juice (use fresh squeezed if you have a lemon handy)

1/4 tsp ground thyme

1/4 tsp kosher salt

1/8 tsp ground black pepper (or white pepper if you prefer)


Instructions:

1.  Preheat the oven to 400 degrees Fahrenheit. Blot the salmon filets dry with paper towel and place them on a prepared foil lined baking sheet.

2.  Season each filet with salt and pepper.

3.  In a small bowl, mix the oil, garlic, dijon mustard, lemon juice, and thyme. Once combined, spoon the mixture over the salmon filets evenly.

4.  Bake for 8-10 minutes, or until the fish flakes easily with a fork. Serve and enjoy!


Notes:

If using salmon filets with skin, add additional cook time. 








Priscilla's Baked Lemon Garlic Butter Salmon



Yield:  2

Cook time:  10 minutes


Ingredients:

2 -6 oz salmon filets, without skin

1 tsp extra virgin olive oil

1 tsp minced garlic

1/4 tsp kosher salt

1/8 tsp ground black pepper

1 tsp lemon juice

1/2 tsp Italian seasoning

1 tbsp unsalted butter (feel free to lessen for lower fat content), cut in half and diced into small cubes


Instructions:

1.  Preheat the oven to 400 degrees Fahrenheit. Blot the salmon filets dry with paper towel and place them on a prepared foil lined baking sheet.

2.  Season each filet with salt and pepper.

3.  In a small bowl, mix the oil, garlic, lemon juice, and Italian seasoning. Once combined, spoon the mixture over the salmon filets evenly. Top each filet with small dices of 1/2 tbsp butter each.

4.  Bake for 8-10 minutes, or until the fish flakes easily with a fork. Serve and enjoy!
